We place great emphasis on raw materials, quality, people and the environment. This can be traced throughout the company - and we are VERY proud of that.
Fish and shellfish
As far as possible, all our seafood comes from certified wholesalers. The wholesalers may have different certifications depending on the type of fish or shellfish in question. But what they all have in common is that they carry the certificate "Global standard for food safety" which can also be seen in our restaurant.
Our tuna is caught with a rod. Thus, the sea is loaded as little as possible, and we make sure that nothing other than the tuna we have ordered is caught. In this way, we are not contributing to the unnecessary killing of dolphins and sea turtles, which are being strangled in the traditional fishing nets.
Tuna fishing with a rod is more expensive than the traditional fishing net method, but it is a price we like to pay.
Likewise, our tiger prawns are farmed without the use of medicines and chemicals, and are of course certified.
