Actually, I'm just a farmer. And good for that. It was in the land of childhood - out there on the family farm in Tistrup, where it was served every day on 3 dishes - that the inspiration, desire and passion for that with food was aroused. Where everything that could be retrieved in the treasury of nature was brought home in the kitchen and prepared.
Always home-made from scratch based on recipes that eventually just sat on the backbone. Just 13 years old, dyslexic, but very creative, I entered the gastronomic world as a dishwasher and kitchen assistant, and continued as a cook student, even though the cookbook could be left out at that time (many cassette tapes were washed, the cookbook filled 36 tapes). In 1995, I became independent for the first time, with Blåvand Kro (stopped in 2009 to completely devote myself to Mr. Forest) - in love with the place, the atmosphere and not least in nature - what it had of fresh and different ingredients.
In 2007, together with my wife, I started the gourmet shop a little further up the street, which of course was not called anything other than Mr. Forest.
I get all my inspiration in the magnificent southwest Jutland nature and want to use as many of its pure ingredients as possible. In all our products beer - snaps specialties I do not think like. brewer, but as a chef, where I would like to make new flavor combinations from nature.
At Mr. Forests we try to give our customers a taste of Southwest Jutland, both with their own products, but also from other like-minded quality-conscious producers.
